Amaranth flour has a malty flavour that works great in sweet and savoury recipes. Try using it in combination with other flours – as it makes for a nice addition to gluten-free blends that also contain millets (bajra, jowar). Amaranth flour is high in protein, so it is great to layer in with whole wheat, emmer wheat, or all-purpose flour when baking for a protein boost.
